We’re trying to embrace the new way of things, so we asked Chat GPT to provide us with some easy to prepare and healthy lunches for kids going to school.  I feel they didn’t disappoint!  In fairness, if someone was to prepare these for me when I was heading off to work, I’d be happy enough!

Turkey and Veggie Pinwheels:

    • Ingredients: Whole wheat tortillas, turkey slices, hummus, spinach leaves, shredded carrots, cucumber strips.
    • Spread hummus on a tortilla, layer turkey slices, spinach leaves, shredded carrots, and cucumber strips. Roll tightly and slice into pinwheels.

DIY Lunchables:

    • Ingredients: Whole grain crackers, sliced cheese, lean turkey or chicken breast, cherry tomatoes, cucumber slices, grapes.
    • Arrange crackers, cheese slices, and meat slices in a lunch box. Add cherry tomatoes, cucumber slices, and grapes for a balanced meal.

Quinoa Salad with Chicken:

    • Ingredients: Cooked quinoa, grilled chicken breast, cherry tomatoes, cucumber, bell peppers, feta cheese, lemon vinaigrette.
    • Mix cooked quinoa, diced grilled chicken, halved cherry tomatoes, chopped cucumber, diced bell peppers, and crumbled feta cheese. Drizzle with lemon vinaigrette and toss to combine.

Veggie Quesadillas:

    • Ingredients: Whole wheat tortillas, black beans, diced bell peppers, corn kernels, shredded cheese, salsa.
    • Spread black beans on a tortilla, sprinkle diced bell peppers, corn kernels, and shredded cheese. Top with another tortilla and cook in a frying pan until golden brown. Serve with salsa for dipping.

Greek Yogurt Parfait:

    • Ingredients: Greek yogurt, honey, granola, mixed berries (strawberries, blueberries, raspberries).
    • In a small container, layer Greek yogurt with a drizzle of honey, granola, and mixed berries. Repeat layers until the container is full. Keep refrigerated until lunchtime.
